i love love love chilli crabs. lagi lagi chilli crab kat devil's crab then dip it with fried mantou. oh yums!! so when i saw one of my relatives in singapore upload these photos on her facebook, i knew it right away that this recipe is a must try for me. i am sooo happy bila i found out that i can also use prawns instead kekeke sebenarnya i tak reti nak siang ketam! whateverlah nanti nanti lah i belajar siang ketam ngan my mom :p
by the way, the singapore chili prawns were really quick and easy to make and they turned out great! The sweet, hot and sour tomato sauce was so tasty and it went really well with the succulent prawns. I liked this dish so much that I have already made it a second time :D
Ingredients
(Serves 2-3)
12 large prawns (shelled, deveined, scored on back)
1 large onion (cut in ringlets)
2 tbs tamarind extract
3 tbs tomato sauce aka ketchup
salt & sugar
1 sprig of coriander (chopped for garnishing only)
in a blender/food processor, blitz together these ingredients until it is paste-like:-
1 large onion
10 dried chillies
8 cloves garlic
2 stalk lemongrass
1 tsp shrimp paste
1" ginger
1 tbs fennel seeds (jintan manis)
Preparation
1. Heat 2-3tbs oil in a wok or shallow saucepan
2. Add onion and stir-fry until it becomes slightly browned
3. Add and fry the blended ingredients till fragrant
4. Add tomato sauce
5. Toss in the prawns & tamarind extract and give it a good stir
6. Season with salt & sugar
7. Garnish with coriander before serving
